This is a true southern comfort food. Add eggs, whipping cream, butter, vanilla extract, and French bread. Optional: Add brandy to sauce. Makes 9x9 pan.
Preheat the oven to 250. Take out the small bag of sugar mixture inside the larger bag and set aside. In a large mixing bowl, whisk together 6 eggs and the contents of the large bag. Then whisk in 1 ½ cups heavy whipping cream and 1 Tbsp. vanilla. Fold in 6 cups of French bread that is cut into 1 inch cubes (be sure it’s a light bread, meaning not too dense). Stir to ensure all of the bread soaks up the juice. Place the prepared mixture into a 9x9 greased pan, cover with foil, and place the pan into a larger pan with sides, sufficient enough to allow for a water bath which should cover the smaller pan by half way. Place the pans into the oven and bake for 2 hours. Remove the foil and raise the temperature to 300 degrees for 1 hour more or until the top of the bread pudding is golden brown. In meantime, make your sauce by mixing together the contents of the small package you set aside earlier, ½ cup melted butter, 1 egg, and 2 tsp. vanilla in a saucepan over medium heat. Stir together until the sugar mixture is melted. Optional: Add 1/8 to ¼ cup brandy, stirring well. Pour over bread pudding when finished cooking. Serve warm.
